ROOSTER WITH HILOPITES FOR 6 PEOPLE
• 1 rooster 1 ½ kilos (preferably free-range)
• 1 big onion
• 1 ½ cup of virgin olive oil
• ½ tbsp of salt
• 1 tsp of pepper
• 2 cups of tomato juice
• 1 cinnamon stick
• 4 cups of hilopites (Greek handmade pasta)
We cut the rooster into pieces, wash it thoroughly and let it dry. We chop and sauté the onion with the oil in a pot. We put the chicken in the pot and fry it till it becomes golden brown. Then we add the tomato juice and the cinnamon stick till it dries up. We stir continuously and add 1 ½ lt of water and let it boil for 1 ½ hours. Then we throw in the hilopites. If need be, we add a bit of water till the hilopites are ready. We serve it either hot or cold with grated cheese on it.
