INGREDIENTS
• 1 ½ kilos rabbit
• 2 teacups extra virgin olive oil
• salt
• pepper
• 400g ripe tomatoes
• 1 ½ kilos small onions
• 3 garlic cloves
• 2 bay leaves
• 1 stick cinnamon
• 3 sticks nutmeg
• A bit of thyme
PREPARATION
We cut the rabbit into pieces and we let it dry. Then we put it a pot with all the other ingredients and we add 1 lt water and cook in a pressure cooker for 1 ½ hours. We open and let it boil till it’s left with a bit of sauce. It’s served either hot or cold.
