DIPLES
INGREDIENTS
•    1 kilo flour
•    8 eggs
•    2 kilos extra virgin olive oil
•    ½ kilo crashed walnut
•    2 tsp cinnamon
SYROP
•    2 cups sugar
•    1 cup honey
•    2 cups water


PREPARATION
We mix all the ingredients together, except for the oil. We knead the dough till it does not stick. We cut pieces of dough as big as an orange. We roll out a very thin pastry and cut in small rectangular pieces (as big as a palm). We put the oil in a pot and heat it very well. When it is really hot we throw in the rectangular pieces one by one and fold them using two forks. We take them out when they’re starting to turn golden and place them on absorbent paper, on a platter. We prepare the syrup. On the burner we dissolve the sugar in the water, we add the honey and let it boil until it starts to thicken a bit. We retrieve from the burner. We take the “diples” one at a time, dip them in the syrup and take them out immediately and decorate with the crushed walnut and cinnamon. They’re ready.
